Avocado & Roasted Balsamic Mushroom Bagel


  • 200g Swiss brown mushrooms, quartered
  • Virgin olive oil
  • 2 teaspoons balsamic vinegar
  • 1 firm ripe avocado, stone removed, peeled, sliced
  • 1 bagel, halved
  • Freshly picked flat-leaf parsley leaves, to garnish



  1. Preheat oven to 200C and line baking tray with baking paper
  2. Place mushrooms on tray, spray oil, drizzle with vinegar and top with salt and pepper
  3. Roast in oven for 15 minutes
  4. Meanwhile, toast bagels and slice avocado into thin wedges
  5. Serve – place a toasted bagel on each plate, top with avocado, mushrooms and parsley

Tip: Mushrooms can be pan fried in a large pan and sprayed with oil over a high heat. Stirring occasionally for about 4 minutes or till golden
